Winemaker Notes
The 2025 Illumination holds true to its name. Fresh and expressive, this is a wine filled with energy. The vibrant acidity captures the brightness of the season. We ferment with native yeast in a variety of vessels to coax different expressions in the wine. French oak barrels, both new and neutral, adds depth and a hint of oak spice. Acacia barrels provide complex floral notes. To preserve the pure fruit flavors, we utilize stainless steel barrels. Ceramic amphora capture freshness. The egg-shaped concrete fermenters offer minerality and richness om the palate.
