Kretschmar's six-month version should be considerably more flavorful than a young Manchego but still relatively approachable. It's a particularly good wine-and-cheese-board Manchego because it has enough nuttiness and savory character to stand up to wine without becoming aggressively sharp.
| Wine | Pairing | Why |
|---|---|---|
| Rioja Crianza | ⭐⭐⭐⭐⭐ | Cherry fruit, subtle oak, and moderate tannin are almost tailor-made for Manchego |
| Verdejo | ⭐⭐⭐⭐⭐ | Bright acidity and citrus/green-apple character refresh the palate |
| Tempranillo | ⭐⭐⭐⭐⭐ | Savory herbal notes and dark/red fruit complement the cheese's nuttiness |
| Cava Brut | ⭐⭐⭐⭐½ | Bubbles and acidity provide an excellent contrast to the creamy, firm cheese |
| Fino Sherry | ⭐⭐⭐⭐½ | Salty, nutty, and dry—an especially Spanish pairing |
| Chardonnay | ⭐⭐⭐⭐ | A lightly oaked version echoes the cheese's buttery and nutty flavors |
