Tasting notes

Appearance: Intense purplish red.

Nose: Red berries, blackcurrant and raspberry.

Palate: Fresh and round, final of fruits. All is in fineness.

Sommelier's advice: All meats and poultry; Cooked pork meats; All cheeses

Grape variety/varieties: Syrah.

Harvest: Grapes are harvested at maturity.

Soil: The soil is composed of high alluvial deposit terraces with a lot of shingles.

Vinification: This Crozes-Hermitage is vinified in cement vats with a daily pumping over. Vatting lasts between 2 and 3 weeks after the alcoholic fermentation.

Ageing: Ageing is performed in vats. The wine will be bottled the next autumn to preserve a maximum of fruits.

 

Sustainable

Chemical pesticides and herbicides are banned. We introduce natural elements (minerals, plants, animals) to preserve natural balances. The soil is fed with organic matter, thus it preserves bacteria which is the real “Mother” of the vine and will transform mineral into vegetal. This precious bacteria transmits the personality of the terroir to the vine and the wine.  It is frequent to see Michel Chapoutier scrutinize the sky. Biodnamics is also about understanding the cycles of the Earth, the sun and the moon. From these observations we take crucial decisions: when to prune, when to harvest. Yields are respected and each terroir offers what its purest essence: its truth.
