Firm/Hard
Cheeses
- Grana
Padano, Stravecchio Oro del Tempo (Italy): An intense and
complex cheese aged for 22 months that is more regulated (for
quality) than its more famous cousin - Parmigiano Reggiano.
- Extra
Aged Gouda (Holland): Eighteen months of aging gives this
fine Gouda an intense caramel/butterscotch flavor and slightly
granular texture.
- Old Amsterdam
(Holland): This cow's milk cheese exhibits a near perfect
balance of firm texture, robust flavor, and rich, smooth finish.
- Postel
(Belgium): A firm yet rich cow's milk cheese aged for 12 months
that has hints of clove and nutmeg.
- Dubliner
(Ireland): A famous cheese often described as a perfect mix
